Obtained from centuries old olive trees that the Salgari Winery owns on the hills of Negrar in the heart of the Valpolicella Classica area.
The olives, not too ripe, are harvested by hand and taken to the mill where the extraction takes place, cold pressing with a mechanical and natural process. The color is intense yellow with pale green reflections.
With a fresh, delicate and fragrant aroma, the taste is slightly fruity and spicy with notes of aromatic herbs and flowers.
